Roasted Red Beet Hummus
- 1 Large Roasted Or Canned Beet (double This Amount If Small/medium)
- 1 can (15 Oz. Size) Chickpeas, Drained.
- 1 Large Lemon, Zest And Juice
- Salt And Black Pepper To Taste
- 2 Tablespoons Tahini
- 2 cloves Garlic (more If Desired)
- 2 Tablespoons Olive Oil
- 1.
- Using a food processor, chop the beet into small pieces.
- Add remaining ingredients except olive oil and blend until smooth.

- Slowly pour the olive oil into the food processor while it is running and blend until smooth.
- 3.
- Taste and adjust seasonings and liquids to desired taste and consistency.
- (I made no adjustments.)
- 4.
- Serve with pita bread, pita chips, or sliced veggies.
