Coffee Topping
- 1 ounce fresh ground espresso or 1 ounce vacuum-sealed flavored ground coffee
- 1 tablespoon brown sugar or 1 tablespoon confectioners' sugar
- 1 teaspoon Splenda granular
- 1 tablespoon of flavored coffee creamer (optional)
- 1 tablespoon cocoa (optional)
- Pam butter cooking spray (1 spray, adds a nice caramel flavor)
- -Spread coffee on paper towel.
- -Spray for one second with Pam.
- -Shake on Splenda, then cocoa, creamer and sugar.
- -Gather paper towel, shake briefly.
- -Put it in a microwave-safe container and nuke for 20 sec.
- -Then throw it in the freezer.
- *great for coffee, blended drinks, granola, or with chopped nuts on muffins.
- *do not attempt to brew finished product as coffee.
- Variation 1:.
- - Add 1 tablespoons water.
- - Add 1 tablespoons cornstarch.
- -Add 1 egg white
- -Whip over low heat on stovetop to make a paste/filling.
- Double ingredients for a batch of filled muffins or pastries.
- Variation 2:
- -Add water, cornstarch and egg white.
- -Add another tbsp of confectioners sugar.
- -Add another tablespoons of cocoa.
- -Add 1 tbsp of cream, half and half, etc.
- -Heat and beat on low to make a nifty frosting.
- Add more Splenda while mixing to taste- I recommend the granulated product.
