Microwave Leftover Roast Beef Stew Recipe
- 2 c. diced roast beef (or possibly pork)
- 1 c. minced onion
- 1 c. thinly sliced carrots
- 1 c. diced potatoes
- 1 pkg. brown gravy mix
- 1/2 teaspoon salt
- 1/2 teaspoon celery salt (opt.)
- 2 teaspoon instant beef bouillon dissolved in 1 1/2 c. Warm water
- 1 bay leaf
- Combine all ingredients in 2-qt casserole.
- Cover.
- Microwave 10 min on HIGH, stir, microwave on HIGH another 10 min.
- Remove bay leaf.
- Serve over rice or possibly noodles, if you like.
