Microwave Leftover Roast Beef Stew Recipe

• 2 c. diced roast beef (or possibly pork)
• 1 c. minced onion
• 1 c. thinly sliced carrots
• 1 c. diced potatoes
• 1 pkg. brown gravy mix
• 1/2 teaspoon salt
• 1/2 teaspoon celery salt (opt.)
• 2 teaspoon instant beef bouillon dissolved in 1 1/2 c. Warm water
• 1 bay leaf

1. Combine all ingredients in 2-qt casserole.
2. Cover.
3. Microwave 10 min on HIGH, stir, microwave on HIGH another 10 min.
4. Remove bay leaf.
5. Serve over rice or possibly noodles, if you like.
