Calico Potatoes Recipe
- 1/4 c. finely minced onion
- 1/4 c. finely minced green pepper
- 2 Tbsp. extra virgin olive oil
- 1 lb russet potatoes peeled and thinly sliced
- 1 tsp salt
- 1 tsp Chef Zader's Seasoning (recipe in instructions)
- 1/2 tsp salt
- 3/4 lb sweet potatoes peeled and thinly sliced

- In a 12-inch non-stick skillet, cook the onion and green pepper in extra virgin olive oil until tender, but not brown.
- Remove the cooked onion/green pepper mix with a slotted spoon.
- 2.
- Add in sliced russet potatoes to skillet.
- Sprinkle with Chef Zader's Seasoning and salt.
- Cook for 5 min over medium heat, turning mix occasionally.

- Add in sweet potato slices; cook, turning occasionally, for about 15 min more or possibly until potatoes are tender, adding more oil if necessary to keep potatoes from sticking.
- Add in the cooked onion/ green pepper mix.
- Heat through.
- Makes 4 servings.
- Seasoning: In a small bowl, stir together 1/4 tsp.
- garlic pwdr; 1/4 tsp.
- dry tarragon, crushed; 1/4 tsp.
- dry thyme, crushed; 1/8 tsp.
- grnd allspice; and 1/8 tsp.
- pepper.
