Calico Potatoes Recipe

  2. In a 12-inch non-stick skillet, cook the onion and green pepper in extra virgin olive oil until tender, but not brown.
  3. Remove the cooked onion/green pepper mix with a slotted spoon.

  5. Add in sliced russet potatoes to skillet.
  6. Sprinkle with Chef Zader's Seasoning and salt.
  7. Cook for 5 min over medium heat, turning mix occasionally.

  9. Add in sweet potato slices; cook, turning occasionally, for about 15 min more or possibly until potatoes are tender, adding more oil if necessary to keep potatoes from sticking.
  10. Add in the cooked onion/ green pepper mix.
  11. Heat through.
  12. Makes 4 servings.
  13. Seasoning: In a small bowl, stir together 1/4 tsp.
  14. garlic pwdr; 1/4 tsp.
  15. dry tarragon, crushed; 1/4 tsp.
  16. dry thyme, crushed; 1/8 tsp.
  17. grnd allspice; and 1/8 tsp.
  18. pepper.
