Orange Chicken With Broccoli
- 3 lbs chicken, cut up
- 2 tablespoons flour
- 12 teaspoon salt
- 14 teaspoon ground cinnamon
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 cup rice
- 2 cups orange juice
- 14 teaspoon hot pepper sauce
- 6 carrots, peeled and sliced
- 4 cups broccoli florets
- 1 orange, sliced
- Remove fat and skin from chicken.
- Combine flour, salt and cinnamon.
- Dredge chicken in seasoned flour.
- Hea oil over medium high until hot.
- Add chicken and cook, turning, until well browned all over, 5-7 minutes.
- Cover and cook chicken over medium high for about 10 minutes.
- Remove to a plate.
- Drain fat from pan.
- Add onion and rice to pan and cook, stirring, 3 minutes.
- Add orange juice, hot sauce and carrots.
- Heat to boiling.
- Return chcien to pan, placing on top of rice mixture.
- Return heat to medium-low, cover and simmer 20 minutes.
- Add broccoli and orange slices.
- Cover and cook 10-15 minutes longer until rice and broccoli are tender.
