Sally's Fruited Chicken Salad Recipe
- 4 c. cooked chicken breasts (cut into cubes)
- 2 c. diced celery
- 2 c. halved red or possibly green seedless grapes
- 1 (15 1/4 ounce.) can pineapple tidbits, liquid removed
- 1 (11 ounce.) can mandarin orange sections, liquid removed
- 1 c. slivered almonds, toasted
- Combine first 6 ingredients, toss well.
- Combine mayonnaise, lowfat sour cream, lemon juice, salt and pepper.
- Fold into chicken mix, blending well.
- Chill.
- Serve on lettuce leaves and a garnish of fruits such as strawberries, cantaloupe and watermelon.
