Chocolate Birthday Cake
- 1 devils food mix
- 1 cup water
- 1/3 cup vegetable oil
- 3 lg. eggs
- 1 tsp. vanilla extract
- 1 cup sour cream
- 2 pkg. (12 oz. each) semisweet chocolate chips
- 1/3 cup seedless raspberry jam
- 3 tbsp. butter
- 2 cups powedered sugar
- Mix first 5 ingredients and 1/4 cup sour cream in large bowl.
- Using mixer beat batter for 2 minutes.
- Stir in 1 cup chocolate chips.
- Divide among two 9-inch cake pans.
- Bake at 350F for 25 minutes.
- Cool for 15 minutes, remove from pans.
- Bring jam and butter to simmer.
- Remove from heat add 3 cups chocolate chips; stir until they melt.
- Beat in 3/4 cups sour cream and sugar.
- Beat 2 minutes.
- Frost cake.
