Cajun Fish Stew Recipe
- 2 x Garlic cloves chopped
- 1 Tbsp. Minced parsley
- 2 tsp Salt divided
- 1 tsp Dry leaf thyme
- 1 x Bay leaf
- 1/2 tsp Grnd allspice
- 1 Tbsp. Oil
- 2 1/2 lb Fish fillets (such as red snapper or possibly white fish)
- 2 Tbsp. Butter or possibly margarine
- 1 c. Minced onion
- 1/4 c. Minced green pepper
- 1/8 tsp Powdered saffron
- 2 can Tomatoes - (16 ounce ea)
- 1/2 tsp Tabasco pepper sauce
- 1 pkt Frzn okra - (10 ounce) cut in 1" pcs
- 1/2 lb Cleaned raw shrimp Warm cooked Rice
- In medium bowl, combine garlic, parsley, 1 1/2 tsp.
- salt, thyme, bay leaf, allspice and oil.
- Mash together till like paste.
- Spread on fish fillets.
- Set aside.
- In large kettle, heat butter.
- Add in onion, green pepper and saffron.
- Cook 5 min.
- Add in tomatoes, remaining 1/2 tsp.
- salt and Tabasco pepper sauce; simmer, uncovered, 10 min.
- Add in fish, okra and shrimp.
- Simmer, uncovered, 5 min or possibly till fish flakes easily when pierced with fork.
- Serve over rice.
- This recipe yields 4 servings.
