Three Layer Jam Cake
- 1 1/2 c. butter
- 2 c. brown sugar
- 1 tsp. vanilla
- 1 c. raisins
- 1 c. nuts
- 1 c. coconut
- 1 c. buttermilk
- 2 c. blackberry jam
- 6 whole eggs
- 1 tsp. nutmeg
- 1 tsp. allspice
- 2 tsp. baking soda
- 3 tsp. cocoa
- 4 1/2 c. all-purpose flour
- Cream together the butter, sugar, vanilla, jam and eggs.
- Sift flour together with the other dry ingredients, then combine the two mixtures alternately with buttermilk.
- Add raisins, nuts and coconut.
- (Take out 1 1/2 cups batter and save.)
- Pour remaining batter equally into 3 round cake pans and bake in your oven as you would any other heavy cake. After cake is cool, take the reserved batter and mix in
- 1/2 cup sugar, 1 cup brown sugar, 1/2 cup butter and 1 cup milk.
- Cook until thickened. Cool and spread in between layers and on top.
- Frost with Caramel Frosting.
