Stir - Fry Vegetables
- 1 (16 ounce) bag baby carrots
- 4 celery ribs, chunked
- 1 medium onion, diced
- 1 (14 1/2 ounce) can low-sodium italian tomatoes
- 12 teaspoon dried basil
- 12 teaspoon oregano
- 14 teaspoon salt
- 1 red bell pepper
- 1 small head of cabbage, cut up
- 1 lb raw broccoli, cut up
- Combine the first 7 ingredients in a slow cooker.
- Cover, and cook on high 3-4 hours or on low 6-8 hours, stirring occasionally.
- Stir in bell pepper, cabbage, and broccoli.
- Cook 1 hour on high, or 2 hours on low, stirring occasionally.
- You may need to add some water if there is not any liquid left on the vegetables.
