Caramel Cashew Squares
- 1/3 cup firmly packed brown sugar
- 1/4 cup cold Land O Lakes Butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup butterscotch-flavored baking chips
- 1/4 cup light corn syrup
- 2 tablespoons Land O Lakes Butter
- 1 cup chopped salted cashews
- Heat oven to 350F.
- Place brown sugar in medium bowl; cut in 1/4 cup butter with pastry blender or fork until mixture resembles coarse crumbs.
- Add flour and salt; mix well.
- Press mixture onto bottom of ungreased 8-inch square baking pan.
- Bake 11-13 minutes or until set.
- Melt butterscotch chips, corn syrup and 2 tablespoons butter in 2-quart saucepan over low heat, stirring occasionally, 2-3 minutes or until smooth.
- (Do not boil.)
- Remove from heat.
- Stir in cashews.
- Pour cashew mixture over hot, partially baked crust.
- Continue baking 8-10 minutes or until mixture is bubbly and set.
- Cool completely.
- Cover; store refrigerated.
- Cut into bars.
