Sea & Shells Salad Recipe
- Lettuce leaves
- 4 c. uncooked sm. shell pasta, elbow macaroni or possibly other sm. pasta shape
- 1/2 c. mayonnaise
- 1/2 c. lowfat sour cream
- 3 tbsp. lemon juice
- 2 tbsp. capers
- 1/2 teaspoon salt (opt.)
- 1/4 teaspoon dry mustard
- 1/4 teaspoon warm pepper sauce
- 1 c. sliced celery
- 1 c. diced cucumber
- 3 c. diced, cooked seafood (use any combination of shrimp, scallops, lobster, crabmeat, tuna, salmon and white fish)
- Cook pasta according to package directions.
- Meanwhile, in large bowl, combine mayonnaise, lowfat sour cream, lemon juice, capers, salt (if you like), dry mustard and pepper sauce; stir till blended.
- Fold in celery, cucumber and seafood.
- Cover and chill about 1 hour to chill.
- Serve on a bed of crisp lettuce leaves.
- Makes 4 to 6 servings.
