Zaugg Family Favorite Bread

  1. In a large bowl add yeast, gluten, salt, sugar, oatmeal, whole wheat flour and water.
  2. Mix well.
  3. Cover.
  4. Let this mixture sit for 30-40 minutes.
  5. This is called sponging.
  6. Add vegetable oil and mix well.
  7. Add enough white flour to make a non-sticky soft dough.
  8. Knead 10 minutes.
  9. Place in greased bowl and let rise until double.
  10. About 30 minutes.
  11. Punch dough down.
  12. Divide dough between 4 greased bread pans.
  13. Cover and let rise for 20 minutes.
  14. Bake at 400 degrees for 30 minutes.
  15. Cool on wire racks.
  16. Note: If you are grinding your own wheat - adjust the coarsness of the flour for different textures.
  17. Enjoy!
