potato fan

  1. Preheat oven to 400F
  2. On medium-low heat,melt butter with next 3 ingredients
  3. Place wooden spoons on each side of the potatoes so you don't cut right through them.sliced potato across with 1/8in.
  4. slices from one end to the other.if U cut each end off spud it will fan out better.
  5. Place spuds in shallow baking dish and pour butter mixture over potatoes.
  6. I got my fingers in there & pinched potato open from the sides and made sure the butter and herb mixture got in between the slices.
  7. Place in the oven on top rack n bake for at least 60 to 75 minutes depending on how many times you open the door.
  8. During the cooking process I use the spoon and basted the potatoes with the excess butter mixture in baking dish 3 or 4 times.
  9. mix ranch& Chipotle hot sauce together spoon over top potatoes, garnish with parsley season with salt, pepper & dusting of Old Bay
