potato fan
- 1 tbsp butter
- 2 tbsp olive oil
- 3 clove garlic minced
- 2 tbsp parsley
- 4 medium Potatoes
- 2 tsp Italian seasoning , more if you like ,none if you don't like
- 1/2 cup ranch dressing
- 1 tsp Chipotle hot sauce, use more if you can stand the heat use less if you don't like it hot
- 1 S&P to taste , I used Himalayan rock salt and freshly cracked black pepper
- 1 pinch of Old Bay
- Preheat oven to 400F
- On medium-low heat,melt butter with next 3 ingredients
- Place wooden spoons on each side of the potatoes so you don't cut right through them.sliced potato across with 1/8in.
- slices from one end to the other.if U cut each end off spud it will fan out better.
- Place spuds in shallow baking dish and pour butter mixture over potatoes.
- I got my fingers in there & pinched potato open from the sides and made sure the butter and herb mixture got in between the slices.
- Place in the oven on top rack n bake for at least 60 to 75 minutes depending on how many times you open the door.
- During the cooking process I use the spoon and basted the potatoes with the excess butter mixture in baking dish 3 or 4 times.
- mix ranch& Chipotle hot sauce together spoon over top potatoes, garnish with parsley season with salt, pepper & dusting of Old Bay
