Black Bean and Butternut Squash Quinoa

  1. Cook quinoa according to package directions.
  2. Meanwhile in a large skillet over medium heat add olive oil.
  3. Once oil is hot add onion and bell pepper and cook until tender, about 5 minutes.
  4. Add black beans, the cooked butternut squash and cumin.
  5. Cook until warmed through.
  6. Add cooked quinoa, mix well and serve.
