Southwestern Black Bean Relish Burger
- 3 cups avocados, medium dice
- 3 cups fire-roasted corn
- 3 cups canned black beans, drained, rinsed
- 3 cups red peppers, small dice
- 1-1/2 cups lime juice Safeway 3 ct For $1.00 thru 02/09
- to taste salt and black pepper
- 24 each ground sirloin beef patties (5 oz. each)
- to taste adobo seasoning
- 24 slices pepperjack cheese, cut into 1/2 oz. slices
- 24 each kaiser rolls, split, toasted
- 3 cups A.1. Gourmet Sauce, Orange Chipotle
- 1-1/2 qt. iceberg lettuce, shredded
- 8 each tomatoes, each cut into 6 slices
- Combine avocados, corn, beans, red peppers and lime juice.
- Season with salt and black pepper; cover.
- Refrigerate until ready to use.
- For each serving: Season 1 patty with adobo seasoning.
- Grill on medium-high heat 2 to 3 min.
- on each side or to medium (160 degrees F), or desired doneness.
- Top with 1 cheese slice.
- Cook an additional 30 sec.
- or until cheese begins to melt.
- Spread cut sides of roll with 2 Tbsp.
- sauce.
- Place burger on bottom half of roll; top with 1/4 cup avocado mixture, 1/4 cup lettuce and 2 tomato slices.
- Cover with top of bun.
