Nightshade Free Beef Stoup
- 3 lbs sirloin, cut into bit sized pieces (Any braising type beef will do)
- 2 quarts beef stock
- 6 carrots, peeled and cut into chunks
- 3 large celery ribs, cut into chunks
- 1 large onion, Use more if you like. DH does not like onion, so I keep the amount smallish
- 1 lb kale, stem removed and cut into 1-inch pieces
- 1 lb collard greens, stem removed and cut into 1-inch pieces
- 2 springs rosemary
- 1 tablespoon thyme
- 2 teaspoons salt, approx
- 23 cup wild rice
- 3 tablespoons balsamic vinegar
- 1 cup sour cream
- Place all ingredients, except Balsamic and Sour Cream, into crockpot.
- Cook on Low at least 8 hours.
- Remove Rosemary springs, add Sour Cream & Balsamic, adjust salt and serve.
