Herb Naan Bread

  1. In a large cup, add heated water, yeast and sugar.
  2. Mix and let sit for five minutes to proof.
  3. If yeast foams after five minutes, it is ready to use.
  4. In a mixing bowl with dough hook add flour, salt, olive oil, yogurt and proofed yeast.
  5. Start mixing on low.
  6. Add in garlic, dill and lemon zest.
  7. Knead on low for five minutes.
  8. A soft dough ball should have formed.
  9. If mixture is too dry, add warm water, 1 tablespoon at a time until soft ball is reached.
  10. If too wet, add 1 tablespoon of flour to reach same results.
  11. Lightly oil a bowl and add dough to bowl.
  12. Cover with plastic wrap and let rise for 1 hour in a warm area.
  13. After 1 hour, punch down dough, cover again and let rest 15 minutes.
  14. Divide dough into 8 individual balls.
  15. Roll each ball out into an oval shape about 8"x6".
  16. Get a grill or large skillet hot over medium heat.
  17. Using the 2 tablespoons of oil for all the dough pieces, brush one side of naan with oil, grill or cook for several minutes on one side until lightly browned.
  18. Brush other side and repeat.
  19. Finish all naan in this fashion.
  20. Serve warm and enjoy.
