Lentils & Rice

  1. Heat oil in a large skillet over medium-high heat.
  2. Saute onions and carrot in oil for 3-5 minutes.
  3. Add lentils and spices.
  4. Stir to coat.
  5. Add broth and tomatoes.
  6. Bring to a boil.
  7. Reduce heat and simmer for 40-45 minutes.
  8. Serve over basmati rice.
  9. Yields 4 servings.
