Lentils & Rice
- 1/4 cups Olive Oil
- 2 whole Onions, Chopped
- 2 whole Carrots, Diced
- 1 cup Lentils
- 1- 1/2 teaspoon Ground Coriander
- 1- 1/2 teaspoon Ground Cumin
- 18 teaspoons Cayenne (red Pepper)
- 3 cups Vegetable Broth
- 1 can 14 Oz Can Diced Tomatoes (undrained)
- Basmati Rice, Cooked, To Serve
- Heat oil in a large skillet over medium-high heat.
- Saute onions and carrot in oil for 3-5 minutes.
- Add lentils and spices.
- Stir to coat.
- Add broth and tomatoes.
- Bring to a boil.
- Reduce heat and simmer for 40-45 minutes.
- Serve over basmati rice.
- Yields 4 servings.
