Seafood Burgers with Basil Tartar Sauce

  1. Heat grill.
  2. (Alternatively burgers can be battered and fried until golden and crispy.)
  3. Make Basil Tartar Sauce: Combine all ingredients in small bowl.
  4. Cover and refrigerate.
  5. Makes 1/2 cup.
  6. Process fish in food processor, pulsing just until shredded.
  7. Add onion, lemon juice, salt and pepper; pulse briefly to blend.
  8. Transfer to medium bowl; stir in egg white and bread crumbs.
  9. Shape into four 1/2-inch-thick patties.
  10. Brush both sides of patties with oil.
  11. Grill over medium-hot heat 4 to 5 minutes per side, until browned and cooked through.
  12. Meanwhile, grill tomato slices 3 to 4 minutes per side.
  13. Place burgers on bottoms of English muffins.
  14. Top each with 2 tablespoons tartar sauce, tomatoes and basil leaves or lettuce leaves whichever you prefer.
  15. Top with muffins.
  16. Serve with potato chips, if desired.
