Grilled Mongolian Elk on Vegetable Mountain

  1. In a large bowl, whisk together the bean paste, Dijon, ginger, garlic, soy, oils, wines, pepper, and juniper.
  2. Reserve 1 cup marinade for Vegetable Mountain.
  3. Pour on top of tenderloin and roll to cover.
  4. Cover, refrigerate, and let marinate at least 4 hours and preferably overnight.
  5. Prepare a grill and coat with oil.
  6. Season the meat with salt and pepper.
  7. On high heat, grill all sides of the tenderloin for 10 to 15 minutes total.
  8. Keep the meat rare and warm in the middle.
  9. Slice and fan over the mountain.
  10. Beverage: Fife, L'Attitude (Rhone Style-Syrah), Mendocino
  11. In a large wok or saute pan, coat lightly with oil and sweat the onions.
  12. Add the marinade, carrots, fennel, and cabbage.
  13. Cook for 3 minutes and add the rest of the vegetables.
  14. Check for seasoning.
  15. Cook another 2 to 3 minutes and splash with vinegar.
  16. Serve.
