Bacon Bomb
- 1 pork lion
- 3 lb thick sliced bacon
- 2 large sweet onions
- 1 packages shredded cheddar cheese
- 1 your favorite BBQ sauce
- 1 your favorite pork rub
- Dice onion and 1 lb of bacon and satue over med hi heat until bacon is done and onion is caramelized
- Trim fat from pork loin.
- Cut loin about 1/2" up from cutting board and roll loin out flat
- Rub loin inside and out with pork rub.
- Place satued onion and bacon and cheese on loin
- Roll loin up
- Wrap loin with remaining bacon
- Cook @ 250 in a smoker or grill set up with indirect heat until internal temp of 165 is reached.
- Baste with BBQ sauce last 30 min of cooking.
- Let rest 15 min then slice and enjoy!
