Bacon Bomb

  1. Dice onion and 1 lb of bacon and satue over med hi heat until bacon is done and onion is caramelized
  2. Trim fat from pork loin.
  3. Cut loin about 1/2" up from cutting board and roll loin out flat
  4. Rub loin inside and out with pork rub.
  5. Place satued onion and bacon and cheese on loin
  6. Roll loin up
  7. Wrap loin with remaining bacon
  8. Cook @ 250 in a smoker or grill set up with indirect heat until internal temp of 165 is reached.
  9. Baste with BBQ sauce last 30 min of cooking.
  10. Let rest 15 min then slice and enjoy!
