Strawberry Souffle with Fresh Strawberries

  1. Preheat oven to 400F.
  2. Coat 6-cup souffle dish with cooking spray or grease with butter.
  3. Coarsely puree half of berries, 3 tablespoons sugar and cornstarch in processor.
  4. Transfer to small saucepan.
  5. Stir over medium heat until mixture boils and thickens, 2 to 4 minutes.
  6. Whisk in orange zest.
  7. Let cool completely.
  8. Slice remaining strawberries.
  9. Transfer to medium bowl.
  10. Toss in 2 tablespoons sugar until mix well.
  11. Beat egg whites in large bowl with an electric mixer until soft peaks form.
  12. Gradually add 3 tablespoons sugar, beat until stiff but not dry.
  13. Fold puree into whites in 3 additions.
  14. Transfer to prepared dish.
  15. Bake puffed and golden, 16 to 20 minutes.
  16. Serve right away with fresh strawberries.
