Strawberry Souffle with Fresh Strawberries
- 24 ounces strawberries hulled
- 8 tablespoons sugar
- 1 tablespoon cornstarch
- 1 teaspoon orange zest freshly grated
- 4 large egg whites
- Preheat oven to 400F.
- Coat 6-cup souffle dish with cooking spray or grease with butter.
- Coarsely puree half of berries, 3 tablespoons sugar and cornstarch in processor.
- Transfer to small saucepan.
- Stir over medium heat until mixture boils and thickens, 2 to 4 minutes.
- Whisk in orange zest.
- Let cool completely.
- Slice remaining strawberries.
- Transfer to medium bowl.
- Toss in 2 tablespoons sugar until mix well.
- Beat egg whites in large bowl with an electric mixer until soft peaks form.
- Gradually add 3 tablespoons sugar, beat until stiff but not dry.
- Fold puree into whites in 3 additions.
- Transfer to prepared dish.
- Bake puffed and golden, 16 to 20 minutes.
- Serve right away with fresh strawberries.
