Blackberry-Lime Sorbet

  1. In a small saucepan, bring the sugar and water to a boil, stirring, until the sugar is dissolved.
  2. Remove from the heat and set aside to cool.
  3. Puree the blackberries in a blender or food processor with the sugar syrup.
  4. Press the mixture through a strainer to remove the seeds, then stir the lime juice into the sweetened puree.
  5. Chill the mixture thoroughly, then freeze it in your ice cream maker according to the manufacturers instructions.
  6. Serve Blackberry-Lime Sorbet with a heap of Lime Granita (page 153).
