Salmon Fillets with Mustard Butter

  1. Place butter, mustard, parsley and lemon juice in small bowl of electric mixer fitted with paddle attachment; beat until well blended.
  2. Place 16 fillets on each of 3 parchment-lined sheet pans.
  3. (Or, use parchment-lined 1/4 sheet pan for trial recipe.)
  4. Spread each fillet with 1 Tbsp.
  5. of the mustard mixture; sprinkle with 1 tsp.
  6. of the bread crumbs.
  7. Bake in 375F-convection oven for 8 to 10 minutes or until topping is lightly browned and fish flakes easily with fork.
