Bison Meatloaf

  1. Preheat oven to 350 degrees F.
  2. In a bowl, mix by hand the meat, onions, oats, salt, pepper, juice and egg just till well blended.
  3. Transfer to a baking dish (I use a 9x13 stoneware pan) and free form into a loaf.
  4. In a separate bowl, mix together brown sugar, mustard and ketchup to form a thick paste.
  5. Spread mixture on the top and sides of meatloaf.
  6. Bake for 1 hour 15 minutes.
  7. Let rest for 10 minutes before cutting into it.
  8. Great served with mashed or parsley potatoes and green beans with onions.
