Baked Potato Packages
- 4 medium potatoes, pared and cut in 1/2-inch cubes
- 1 cup chopped onion
- 1/2 cup coarsely chopped green pepper
- Salt and freshly ground black pepper to taste
- 1/4 teaspoon caraway seed
- 1/4 cup butter
- Place potatoes in center of 18-by-22-inch rectangle of heavyduty aluminum foil.
- Add onion and green pepper.
- Season with salt, pepper and caraway.
- Dot with butter.
- Seal securely.
- Place foil package, seam side down on baking sheet and bake at 425 degrees for about 40 minutes.
- Turn package once after 20 minutes.
