  1. Cook and stir bacon in Dutch oven or large deep skillet until crisp.
  2. Remove bacon from pan with slotted spoon, reserving 1 Tbsp.
  3. drippings in pan.
  4. Drain bacon on paper towels.
  5. Add onions, carrots, celery, thyme, bay leaf and pepper to drippings in pan; cook 5 min., stirring occasionally.
  6. Stir in broth and quinoa.
  7. Add kale; cover.
  8. Simmer on medium-low heat 20 to 30 min.
  9. or until quinoa is tender, stirring occasionally.
  10. Discard bay leaf and thyme stems.
  11. Stir in bacon and vinegar.
