Brownie Berry Ice-Cream Sandwiches

  1. In a large bowl, stir together flour, sugar, cocoa, baking powder and salt.
  2. Add oil, eggs, vanilla and 2 tablespoons water; mix well.
  3. Add chcolate chips, if using.
  4. Line an 8-inch square baking pan (bottom and two opposite sides) with foil.
  5. Grease or spray pan and lining.
  6. Spoon batter into pan; smooth top.
  7. Bake in a 350F oven for 40 minutes or until a tooth pick inserted in center comes out clean.
  8. Let cool completely in pan.
  9. Losen edges and, using foil, lift brownies to counter.
  10. Cut horizontally in half.
  11. Slip flexible cutting board between halves to easily remove top,.
  12. Set foil and bottom half back into the pan.
  13. cut top half into 6 or 9-inch serving size pieces.
  14. Set side.
  15. FILLING AND TOPPING: Spread bottom half of brownies with strawberry jam.
  16. Spoon ice cream over jam, making smooth 3/4 inch thick layer.
  17. Arrange top pieces of brownies ove ice cream; press gently into place.
  18. Wrap and freeze until firm for up to 3 months.
  19. To serve, lift brownies out of pan, Cut into 6-inch serving pieces and place on individual dessert plates.
  20. Top with strawberries.
  21. Garnish with mint sprig and dusting of icing sugar.
