Mustard- and Rosemary-Roasted Game Hens

  1. Preheat oven to 375F.
  2. combine first 4 ingredients in small bowl.
  3. Gradually whisk in oil.
  4. Rub cavities and outside of hens with mustard mixture.
  5. Season with salt and pepper.
  6. Place 1 large rosemary sprig in cavity of each hen if desired.
  7. Arrange in shallow roasting pan.
  8. Bake until cooked through, about 1 hour 15 minutes (cover with foil last 15 minutes if hens are browning too quickly).
  9. Let stand 5 minutes and serve.
