Brie and Dried Cranberry Quesadillas
- 1 Tbs. olive oil
- 1 cup thinly sliced onion
- 8 6-inch flour tortillas
- 1/2 lb. soft Brie cheese, cut into 1/2-inch pieces
- 1/2 cup dried cranberries
- Preheat oven to 425F (unless making ahead).
- Heat oil in medium skillet over medium-high heat.
- Add onion, and cook 5 to 7 minutes, or until soft and browned, stirring often.
- Transfer onion to small bowl to cool.
- Arrange 4 tortillas on baking sheet.
- Divide Brie pieces and onion among tortillas, sprinkle with cranberries, then top with remaining tortillas, pressing to adhere.
- (If making ahead, cover with plastic wrap, and refrigerate.)
- Bake 8 minutes, or until cheese melts.
- Cut each into 6 wedges, and serve.
