Delicious Okara Muffins with White Chocolate

  1. Preheat the oven to 320F/160C.
  2. Beat the egg and add sugar.
  3. Mix well to combine.
  4. Mix in the okara.
  5. Add soy milk and mix.
  6. Add the skim milk powder and mix.
  7. Add cocoa powder, and mix.
  8. Add chocolate chips and mix.
  9. Pour the batter into muffin pan lined with paper cups, and optionally top with walnuts.
  10. Bake for 25 minutes at 320F/160C.
  11. I'm so proud of this recipe - it's like a gateau au chocolat!
  12. Cool, and wrap in plastic wrap.
  13. When they've cooled down completely, store in the refrigerator.
  14. If I have one of these with tea as an afternoon or evening snack, I'm full for a long time, and I'm satisfied with a light dinner.
  15. If you have a light dinner, you won't use too much energy to digest your food, and will wake up feeling good.
  16. If you overeat at night it's really hard to wake up in the morning.
