Turkey Cranberry Turnovers

  1. Preheat oven to 400F (200C).
  2. In a small saucepan, over medium-high heat, saute cranberries, sugar, orange zest and orange juice until berries pop.
  3. Mash lightly with a fork.
  4. Meanwhile, in a skillet, melt butter over medium heat.
  5. Saute onion until tender.
  6. Stir in cranberry mixture, turkey, salt and pepper; let cool.
  7. Use the puff pastry sheets to form 8 turnovers, using the turkey mixture as filling.
  8. Place on a baking sheet and bake for 20 to 25 minutes, or until browned and puffed.
