Turkey Cranberry Turnovers
- 2/3 cup (150 mL) fresh cranberries
- 1/4 cup (50 mL) granulated sugar
- Finely grated zest and juice of 1/2 orange
- 1 tsp (5 mL) butter
- 3 tbsp (45 mL) chopped onion
- 1 cup (250 mL) finely chopped skinned roasted turkey
- Salt and freshly ground black pepper to taste
- 1 box (15 oz/425 g) frozen puff pastry, thawed
- Preheat oven to 400F (200C).
- In a small saucepan, over medium-high heat, saute cranberries, sugar, orange zest and orange juice until berries pop.
- Mash lightly with a fork.
- Meanwhile, in a skillet, melt butter over medium heat.
- Saute onion until tender.
- Stir in cranberry mixture, turkey, salt and pepper; let cool.
- Use the puff pastry sheets to form 8 turnovers, using the turkey mixture as filling.
- Place on a baking sheet and bake for 20 to 25 minutes, or until browned and puffed.
