Deem's Chicken Casserole

  1. cook rice mix per package instructions, subbing 1/2 cup sherry for 1/2 cup of the liquid, and chicken stock for the rest.
  2. add chicken and stir to cool rice a bit.
  3. add sour cream, mushrooms, and water chestnuts.
  4. stir.
  5. spray casserole and transfer mix.
  6. top with cheese.
  7. bake as above until bubbly.
