Organic Roast Hen

  1. Place oven on high broil.
  2. In a casserole dish or brownie pan, place one sheet of aluminum foil in the bottom.
  3. Take the chicken and remove bag of gizzards and wash it thoroghly with lukewarm water.
  4. Place chicken breast side up in pan.
  5. Cover chicken with the olive oil using a basting brush.
  6. Place second piece of aluminum foil over the chicken.
  7. Put chicken in oven and broil for 1 hour.
  8. Remove top sheet of aluminum foil and place back in oven for another 25 minutes - depending on your oven.
  9. Chicken should register 165 degrees F in the breast and at least 175 degrees F in the legs and thighs.
  10. Use a meat thermometer to check.
