Organic Roast Hen
- 1 whole organic chicken
- 2 Tbsp olive oil
- 2 sheets aluminum foil
- Place oven on high broil.
- In a casserole dish or brownie pan, place one sheet of aluminum foil in the bottom.
- Take the chicken and remove bag of gizzards and wash it thoroghly with lukewarm water.
- Place chicken breast side up in pan.
- Cover chicken with the olive oil using a basting brush.
- Place second piece of aluminum foil over the chicken.
- Put chicken in oven and broil for 1 hour.
- Remove top sheet of aluminum foil and place back in oven for another 25 minutes - depending on your oven.
- Chicken should register 165 degrees F in the breast and at least 175 degrees F in the legs and thighs.
- Use a meat thermometer to check.
