Cheesy Chicken and Rice

  1. Boil 3 cups of water.
  2. Add the rice and spinach to the boiling water and bring back to a boil.
  3. Reduce to a simmer and cover.
  4. Cook for 5 minutes, then remove from heat and let stand for 5 minutes.
  5. In a separate pan, heat the olive oil and cook the chicken until no longer pink.
  6. Mix the chicken and Velveeta into the rice and spinach.
  7. Serve hot.
