Cheesy Chicken and Rice
- 6 ounces Baby Spinach
- 4 cups Minute brown rice
- 16 ounces Velveeta reduced fat cheese product, cubed
- 1 lb chicken breast, cubed
- 1 tablespoon extra virgin olive oil
- Boil 3 cups of water.
- Add the rice and spinach to the boiling water and bring back to a boil.
- Reduce to a simmer and cover.
- Cook for 5 minutes, then remove from heat and let stand for 5 minutes.
- In a separate pan, heat the olive oil and cook the chicken until no longer pink.
- Mix the chicken and Velveeta into the rice and spinach.
- Serve hot.
