Country Garden Sandwiches

  1. Mix cucumber, tomato, green pepper, onion, sugar, wine vinegar, mayonnaise, salt and pepper well.
  2. Cover and refrigerate overnight or longer.
  3. When ready to prepare sandwiches, drain mixture in sieve for at least 1 hour.
  4. Let cream cheese reach room temperature and soften with enough milk to spread easily.
  5. Trim crusts from bread; spread with cream cheese, then vegetable mix. Makes 8 to 10 sandwiches.
