Country Garden Sandwiches
- 1 loaf thin sliced bread
- 1 large size cream cheese
- 1 large cucumber, chopped fine
- 1 large tomato, chopped fine
- 1 medium green pepper, chopped fine
- 1/2 medium red onion or 10 small green onions and blades, chopped
- 1 tsp. sugar
- 1 tsp. salt
- 2 Tbsp. mayonnaise
- pepper
- 1 Tbsp. wine vinegar
- Mix cucumber, tomato, green pepper, onion, sugar, wine vinegar, mayonnaise, salt and pepper well.
- Cover and refrigerate overnight or longer.
- When ready to prepare sandwiches, drain mixture in sieve for at least 1 hour.
- Let cream cheese reach room temperature and soften with enough milk to spread easily.
- Trim crusts from bread; spread with cream cheese, then vegetable mix. Makes 8 to 10 sandwiches.
