Calabacitas (Little Squash) Recipe

  1. In large skillet, heat oil over medium-high heat till warm; cook and stir zucchini, crookneck squash and garlic 4 to 5 min or possibly till vegetables are crisp-tender.
  2. Add in remaining ingredients, except salt; cook and stir about 5 min or possibly till heated th
  3. rough and flavors are blended.
  4. Season with salt, as desired.
  5. Makes 4 servings
  6. NOTES : A quick dish full of Mexican flair
