Penne Vegetable Carbonarra Inspired Pasta

  1. Cooke vegetables until tender.
  2. Salt pasta water well, cook noodles until tender, do not rinse and save 1/2 cup pasta water.
  3. Whip eggs through dijon.
  4. Put HOT noodles in a large bowl.
  5. Pour egg mix on noodles and put your cheese slice on top.
  6. Put HOT veggies on top and mix everything together.
  7. Add reserved pasta water, little at a time.
  8. Let sit for a minute, then eat.
  9. Important: pasta must be very hot in order to cook your eggs.
