Penne Vegetable Carbonarra Inspired Pasta
- 8 ounces penne
- 2 eggs
- 2 tablespoons butter
- 1 tablespoon mayonnaise
- 2 teaspoons Dijon mustard
- 2 cups Brussels sprouts
- 2 cups kale
- 2 zucchini
- 1 tablespoon garlic
- 1 teaspoon salt and pepper
- 1 slice American cheese
- Cooke vegetables until tender.
- Salt pasta water well, cook noodles until tender, do not rinse and save 1/2 cup pasta water.
- Whip eggs through dijon.
- Put HOT noodles in a large bowl.
- Pour egg mix on noodles and put your cheese slice on top.
- Put HOT veggies on top and mix everything together.
- Add reserved pasta water, little at a time.
- Let sit for a minute, then eat.
- Important: pasta must be very hot in order to cook your eggs.
