Deep Dish Cookie... With Beans!
- 2 (15 ounce) cans garbanzo beans, drain and rinse
- 1 cup quick oats
- 12 cup applesauce
- 3 tablespoons coconut oil
- 2 teaspoons vanilla
- 2 teaspoons baking powder
- 12 teaspoon baking soda
- 12 teaspoon salt
- 1 14 cups sugar
- 1 cup chocolate chips
- Combine everything besides chocolate chips Ina large food processor until smooth, scape sides as needed.
- Stir in chocolate chips and bake in a greased 10 inch springform pan at 350 for 35-40 mixtures.
- Cool 15 minutes at least before serving.
- Mini chips work, can sub white beans for garbanzos.
- I use coconut sugar with good results.
- Can make sugar free with using 2 cups of soft, pitted dates.
