Tabbouli Salad Recipe
- 1 c. bulgar wheat, uncooked
- 2 c. boiling water
- 1/2 c. minced parsley
- 1/4 c. minced mint or possibly 2 tbsp. dry
- 4 green onions, minced
- 2 med. tomatoes, minced
- 16 ounce. can chick peas
- 4 ounce. feta cheese, broken into large chunks
- Sm. can black olives
- Cucumber, diced (optional)
- Pour boiling water over bulgar in large bowl.
- Let stand 1 hour.
- Drain well in colander and return to bowl.
- Add in remaining ingredients and dressing and blend well.
