The Sea Hag's French Silk Pie
- 1 cup sugar
- 1 cup unsalted butter, room temperature (NO exceptions)
- 3 ounces chocolate (unsweetened baker's)
- 4 eggs
- 1 pie crust (cookie crumb variety)
- In a double boiler, start melting the chocolate.
- When it's melted, take it off the boiler and let it cool.
- Cream the butter and sugar with a mixer for about 2 minutes.
- Add 2 eggs, mix on high for 2 minutes.
- It's important to mix for the ENTIRE two minutes.
- Add cooled chocolate and mix until combined.
- Add the last two eggs and mix on high for another 2 minutes.
- Scoop into the pie crust and freeze for an hour.
