Chicken Charlie Casserole
- 1 Uncle Ben's boil-in-bag rice
- 1 pkg. thighs, boiled with bay leaf
- salt and pepper to taste
- 1 can corn and 1 can peas or 1 (1 lb.) bag frozen vegetables
- 1 can cream of celery soup
- 1 can cream of mushroom soup
- 2 stacks Hi Ho crackers, crushed
- 2 sticks margarine, melted
- Prepare rice according to package instructions, then spread out in the bottom of a large baking pan.
- Boil chicken until done; cool.
- Remove meat from bone; layer evenly over rice.
- Season to taste.
- Prepare vegetables according to packaging and layer over chicken.
- Mix together and heat soups; pour over vegetables. Crush crackers and completely cover casserole.
- Melt butter in microwave and pour over crust.
- Bake at about 350u0b0 for approximately 10 minutes.
