Christmas Orange Bread

  1. Mix flour, sugar, baking powder, salt, raisins, nuts, and candied fruit together.
  2. Combine and beat slightly the banana and orange juice; Set aside.
  3. Beat eggs into prunes one at a time.
  4. Alternately, add prune/egg mixture and banana/orange mixture to dry ingredients mixed with fruits and nuts.
  5. A wooden "fork" works well for the mixing.
  6. Pack into 9X5X3 loaf pan lightly sprayed with Pam and lined with wax paper.
  7. Bake at 350o for 1 hr.
  8. or until done.
  9. Cool 20 min.
  10. before removing wax paper and turning out on a rack.
  11. Cool before icing.
  12. Icing: Mix powdered sugar into an egg white until smooth and easily spreadable.
  13. You want a thin icing.
  14. If you get it too thick, add a little skim milk.
  15. Dot icing with cut up candied (glace') cherries as desired.
  16. After frosting is firm, wrap in aluminum foil and refrigerate.
  17. Improves with freezing.
