Southern Chili Recipe
- 2 lbs. hamburger
- 2 lg. onions, diced
- 4 cloves garlic, crushed
- 1 (16 ounce.) can whole tomatoes
- 1/2 pound fresh mushrooms
- 2 lg. green peppers, diced
- 2 med. stalks celery, diced
- 4 to 6 tbsp. warm chili pwdr
- 4 teaspoon salt
- 2 teaspoon sugar
- 2 tbsp. Worcestershire sauce
- 1 pound uncooked red kidney beans
- 1 (8 ounce.) can tomato paste
- Soak 1 lb.
- of red kidney beans overnight in water.
- Boil the beans in water and 1 teaspoon of salt till beans are soft.
- Set them aside.
- Saute/fry the celery, green peppers, onions in a large frying pan with a little veg.
- oil till slightly browned.
- Saute/fry the hamburger meat till browned and then drain the excess oil off.
- Drain beans, add in hamburger meat, green pepper, onions, mushrooms and celery.
- Stir in the tomato paste and whole tomatoes with 2 cans of water.
- Add in sugar, salt, Worcestershire sauce and black pepper, simmer this mix for about 1 1/4 hrs adding water when chili becomes too dry.
- Serves 10 to 12 people.
