No-Cook Tomato Sauce with Penne
- 12 ounces penne
- 1/4 cup virgin olive oil
- 6 tomatoes, diced
- 3 tablespoons balsamic vinegar
- 3 cloves garlic, minced
- Fresh basil, chopped
- Grated Parmesan cheese
- In a large pot of boiling
- In a large pot of boiling salted water cook penne according to package directions.
- In a large bowl combine tomatoes, garlic, olive oil and vinegar.
- Toss together with basil.
- When tender, drain penne, add to bowl and toss to coat.
- Serve with fresh Parmesan cheese
