Endive Leaves With Ratatouille
- cooking spray
- 1 small eggplant, cut in 1/2 inch cubes
- 1 small zucchini, diced
- 2 small tomatoes, diced
- 1 small onion, diced
- 14 cup fresh thyme, chopped
- 3 garlic cloves, minced
- black pepper
- 40 large Belgian endive, leaves
- Spray a large saucepan with cooking spray; add vegetables and saute 5 minutes.
- Add thyme and garlic.
- Cover and cook over low heat until tender, about 10 minutes, stirring occasionally.
- Season to taste with pepper.
- Cool.
- Spoon vegetable mixture into endive leaves.
- Arrange filled leaves in a fan pattern on a large platter.
