Crusted Tofu Open-Faced Subs
- 3 whole Fresh Tomatoes Or Substitute One 14-ounce Can Crushed Tomatoes, Organic For The 3 Tomatoes
- 3 cloves Garlic, Chopped
- 1 teaspoon Dry Oregano
- 1/2 teaspoons Dry Rosemary
- 2 Tablespoons Fresh Parsley, Chopped
- 1 teaspoon Dry Basil Or 7 Fresh Basil Leaves, Torn
- 1 cup Water, Add 1/2 Cup More If Desired
- 2 teaspoons Salt, Or To Taste
- 1 teaspoon Black Pepper, Or To Taste
- 1 teaspoon Red Chili Flakes (optional)
- 2 Tablespoons Tomato Ketchup
- 3 Tablespoons Parmesan Cheese, Shredded
- 1 whole Egg
- 13 cups Breadcrumbs (homemade Or Store Bought)
- 2 teaspoons Italian Seasoning, Or To Taste
- 7 ounces, weight Extra Firm Tofu, Organic
- 1 teaspoon Olive Oil
- 1 whole French Bread
- 10 pieces Fresh Spinach Leaves
- 5 Tablespoons Parmesan Or Part Skim Mozzarella, Shredded (optional)
- For the sauce: If using fresh tomatoes, you can remove their skins by boiling them in water for 10-15 minutes.
- Then remove them from the water and remove the skins.
- Dump tomatoes, garlic, oregano, rosemary, parsley, basil and around 1-1.5 cups water in a pot over medium-high heat.
- Let the sauce simmer for 15-20 minutes or until it thickens.
- After the sauce thickens put it in a blender and pulse until you get a fine paste.
- Put it back on heat.
- Add salt, black pepper, chili flakes, ketchup and cheese and let it cook for few more minutes.
- Taste and adjust seasoning.
- Remove from heat and set it aside, with the lid on.
- For the tofu: In a bowl, stir the egg.
- On a plate, add breadcrumbs and seasoning and mix to combine.
- Cut the tofu into half inch thick slices.
- I then cut the slices in half, into triangles.
- Dip the tofu slices, first in egg and then in bread crumbs and twist and turn the tofu to coat on all sides.
- Heat olive oil in a skillet over medium heat.
- Once hot add the tofu slices.
- Let them get crispy for 7-10 minutes and then flip.
- Repeat.
- For the sandwich assembly: Turn on the broiler.
- Cut the loaf of bread in half horizontally and lay it out on a broiler pan.
- Keep the cut side of bread up and coat it with sauce.
- Put tofu slices on top and add more sauce.
- Add fresh spinach leaves.
- Here if you want more cheese, you can top it up with cheese like Parmesan or mozzarella or any cheese of your choice.
- Place it in the preheated broiler oven for 4-5 minutes until bread gets crispy.
- Serve immediately.
