Open-Face, Meatless Breakfast Sandwich
- 1 teaspoon olive oil
- 1 egg
- 1 frozen reduced-fat whole-wheat waffle
- 1 vegan burger
- Spray a skillet with non-stick spray and heat oil in the skillet.
- Break the egg into the skillet and 'fry' it.
- While the egg is cooking, toast the waffle in a toaster or toaster oven, and heat the boca patty in the microwave--one minute per side, on high.
- To assemble: place the toasted waffle in a bowl, and top with the heated boca patty.
- Slide the fried egg on top of the patty.
- Salt to taste, or serve with maple syrup!
