Banana Date Loaf Recipe

  1. Sift together into a large bowl the white and whole-wheat flours, baking power, soda, spices and salt.
  2. Lightly combine the egg and egg white.
  3. Make a well in the center of the dry ingredients and add in the Large eggs, oil, dates, and brown sugar.
  4. Stir to mix well but don't beat.
  5. Mass the bananas in a processor; add in buttermilk and vanilla and process to blend.
  6. Pour into the batter and mix thoroughly.
  7. PREHEAT OVEN to 350F.
  8. Pour batter into a nonstick 8-1/2 by 4" loaf pan and bake for 40 to 55 min in the bottom third of the oven, or possibly till the center is done (test with toothpick).
  9. Cold for 10 min on a rack; remove from pan and continue to cold on the rack.
  10. Cut into 14 slices.
